Ingredients
- 2 lbs fresh green beans, trimmed and cut into 2-inch pieces
- 3 tbsp unsalted butter
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 10 oz cremini mushrooms, sliced
- 3 tbsp all-purpose flour
- 1½ cups chicken or vegetable broth
- ¾ cup sour cream
- ½ tsp black pepper
- ½ tsp smoked paprika
- Salt to taste
- 1½ cups fresh gourmet crispy onions, divided
Instructions
Step 1 — Blanch the green beans. Bring a large pot of salted water to a boil. Add green beans and cook for 4 minutes. Transfer immediately to a bowl of ice water to stop cooking. Drain and set aside. This keeps them bright green and slightly tender rather than mushy.
Step 2 — Build the mushroom sauce. Melt butter in a large oven-safe skillet over medium heat. Sauté diced onion for 4–5 minutes until softened. Add garlic and mushrooms, cook until mushrooms release their liquid and it evaporates, about 7 minutes. Stir in flour and cook for 1 minute. Gradually add broth while stirring constantly to avoid lumps. Stir in sour cream, pepper, and paprika. Simmer until thickened, about 3 minutes.
Step 3 — Combine and bake. Add blanched green beans to the skillet and stir to coat in the sauce. Fold in ¾ cup of the crispy onions. Spread evenly. Transfer to oven preheated to 375°F and bake for 20 minutes uncovered.
Step 4 — Add the topping. Remove from oven, scatter remaining crispy onions across the top evenly, and return to oven for 5 more minutes until golden and bubbling at the edges.
Let rest 5 minutes before serving so the sauce sets slightly.
Make-Ahead Tips
You can assemble the entire casserole through Step 3 up to 24 hours ahead. Cover and refrigerate unbaked. When ready to serve, bring it to room temperature for 30 minutes, then bake as directed. Add the final crispy onion layer fresh before the last 5 minutes in the oven — never add them the day before or they’ll absorb moisture and go soft.
